Been MIA…

I know I haven’t posted much lately, but it seems my little world isn’t the same.  I seem to be in a funk and can’t figure out how to get out of it !!  I am realizing this blog is like my journal and I feel better when I write about how I am feeling, even if it is also a blah blah blah.. so bare with me.

Weight Watchers:  I was doing soo well before Spring Break, and now it has just went down hill!  I am not making a menu, so I am eating things I know are bad for me … WHY???  I don’t know!!

Running:  I am not doing as I wish I would be doing. I have a 5k to run in 2 weeks and I am not prepared AT ALL!

Kids: My 2 boys were both born with a blood disorder, Hereditary Spherocytosis .  And Kaleb seems to have an enlarged spleen now.  He had an ultrasound appointment last week and next week he will have a CAT scan of his belly.  We also are being sent to a surgeon.
Our new doctor (who I totally love!) talked Shelby into getting back on his ADD medicine!!!

Navy Life:  My husband has been gone since we got back from Spring Break, but will be home Saturday. It’s times like now that I really miss being “connected” to the military.  You see we are stationed in a remote area (military wise that is) and there are no bases near by so the support I was able to seek from fellow military spouses is hard to find.

Family: My B-mom (birthmom) is currently on chemo and will be starting radiation for a couple of spots they found.  I am soo worried.  She is on her 3rd battle with breast cancer as it is and now more….  I am glad she is soo strong. 

Medical:  The new doctor changed my ADD medication and I am now on the same as Shelby, Vyvanse.  I am still not sure if I like it.  I am also back taking my allergy medicine.

Well, now that I have “talked” about the things in my life right now, I feel a little better.  I have also realized that maybe my dieting failure right now is that I am STRESSED!!!  I need to work on the stress I know, maybe when my hubby gets home this weekend I can share my stress/ worries with him and lighten my load!

I have been trying to get into a workout routine this week.  I guess I should be happy that I am doing something.  I have ran/ walked a couple of times this week.

Last Weeks Weight: 177

This Weeks Weight: 172.4

Change: –4.6lbs

Total Loss {since Jan 2010} – 16.6 lbs !!

Some ways I plan to increase my weight loss for next week:

After spring break a couple of weeks ago, I haven’t been doing my menu for dinner, it has become just what ever I can find to cook.  I really have to get back to my menu planning.

Starting the Couch25k program! – yea, I was supposed to start it last week! hehehe … and once again – I was supposed to start is last week and the week before !

Texas Roadhouse + nutritional information

OK, since I joined Weight Watchers I am become somewhat obsessed with knowing the nutritional information at restaurants.  I understand that there are only a few states that require it by law.  My state, Texas, DOES NOT!  I have not been totally bothered by a restaurant not providing until I was looking for the information for Texas Roadhouse… here is what they say about it:

Thank you for contacting us regarding our nutritional information. At this time, we do not offer calorie counts and other nutritional information.

We can assure you that we are cognizant of the demand from guests such as yourself to provide this information, but there are several factors that make this difficult.

Many of the large foodservice companies that offer specific nutritional information can do so because their food is pre-packaged and/or pre-portioned. Since we make our food from scratch, including the bacon bits, croutons, and dressings, it is next to impossible to provide exact nutritional information because of slight variations that depend upon who prepares the food.

We also make our bread from scratch each day and hand-cut our steaks, so again, we do not have the exact information printed when it arrives like some foodservice operators or what you may find in the grocery store.

We have attempted to provide some information in the past, but we pulled back after some guests complained we were not detailed enough. In addition, some enterprising folks tested the food and when it fell outside the guidelines threatened legal action. As such, we stopped providing our special gluten-free menu, for example.

In addition, many states, counties and cities across the nation are attempting to pass legislation providing restaurants with guidelines and rules for displaying nutritional information. As a result, our efforts are on hold until we know what information will be required, the ranges that will be allowed and how that information should be distributed.

Again, let me assure you that we are trying to find a solution so that our guests can make informed decisions. Thanks again for contacting us, and let us know if you have additional questions.”

So, I guess they are the ONLY restaurant that makes their food from scratch!

Here is what I think: they obviously are hiding something – like there are soo many calories in their food if you knew you wouldn’t eat there !!

If anyone wants to know why we have an obesity problem in the US, it’s because restaurants want to keep us in the dark about their foods.  In fact, I was looking at kids meals and the calories at some restaurants and was SHOCKED by the amounts in KIDS MEALS!!!

1. Have you ever had a celeb sighting?
No, I don’t think so.  Other than in my dreams, or at a concert.


2. What temperature do you keep your house?
Summertime 78 and winter 68.  This is pretty consistent in our new house :)

3. Do you notice dust at other peoples homes?
Only at my mom’s house, because she would in my house !  Love ya mom !

4. What's the worst job you ever had?
Oh wow, there are few it could be!  I worked at a grocery store bagging groceries when I was in high school, that was not much fun!

5. What is your most sentimental possession?
I would have to say my pictures.  I have my mom’s wedding pictures and pictures of my grandparents.  I would have alot if people would make wills before they pass away to keep family members from fighting over things!  My will is going to have each item assigned to a person down to every pencil {maybe not every pencil, but you get my point!}

True Confessions

My True Confessions are about Spring Break Mini Trip.  Im confessing to everything I ate!

Friday:
dinner: McDonald’s kids meal w/ fries

Saturday:
breakfast: bacon & egg breakfast burrito (from a really good mexican place)

Lunch: ham sandwich with chips

Supper: brisket, potatoes & onions

Sunday:
breakfast:
sausage & egg breakfast burrito (made my MIL)

Lunch: baked chicken (with skin), cucumber, onion, tomatoe sald in vinegar, homemade mac & cheese !(yum)

Supper: sausage & shrimp gumbo (made by my brother), rice and beans

Monday:
breakfast: pancake with syrup (made by my dad)

Lunch: Giant hamburger with cheese( from local burger place, full of grease) & fries

Snack: (like I needed it) dried sausage and cheese {had to eat it, family made the dried sausage}

Supper: shrimp wrapped in bacon, ribs, potatoe salad, baked beans (w/ peaches), cookies {ate at my Birthmom’’s}

Tuesday:
breakfast: ham & egg breakfast burrito (made by my dad)

snack: more dried sausage (I just can’t get enough)

Lunch: ham & cheese sandwich with Lay’s chips, cookie

Supper: Whataburger justaburger & fries

So, I now see why I gained almost 4 pounds this week! :(

What a tough few days.  I went home for a mini vacation and it wasn’t good when it comes to food!  The food is all fried and dripping in butter.  I was sooo depressed when I got on the scale this morning :(   I am going to have to work extra hard this week!!!

This Weeks Weight: 177

Change: +3.6 lbs

Total Loss {since Jan 2010} - 12 lbs !!

Spring Break Baby!!

Tomorrow is the Friday before Spring Break starts!  We have decided to go visit family for a couple of days.  I only took off work Monday & Tuesday.  When I originally decided all this I thought, “how great to go and visit everyone!”.  Well, we are not leaving till I get off work Friday {around 5pm} and driving the 5 hours to our first destination. Staying there till Sunday {that sounds like a good amount of time, but it is really only 1 day}. Leaving there Sunday to head to the next stop {2 hours}. Spending Sunday and Monday at my parents {gotta set up my Dad’s new laptop for him} and also plan to see my birth mom while we are visiting down there.

So, along with all the driving we will have to do we are also taking Delphi {our dog}.  We take her when we travel mainly because I don’t like to leave her with anyone. Now, not only will it be myself and my husband, but our 3 kids and dog all in my truck!!!

My biggest worry on this “adventure” is what I will be eating. I have been doing soo well on Weight Watchers, but I am not sure if I will be able to not eat the yummy fattening food my dad cooks!!!

Lori's Lean Lemon Chicken

Lemon Chicken!


Lori’s Lean Lemon Chicken
Makes 4 Servings
Points: 3

2 tsp garlic powder
2 tsp lemon pepper
½ tsp seasoned salt
4 small (1/4 lb) boneless skinless chicken breast
I Can’t Believe it’s Not Butter! Spray
1 cup lemon juice, preferably fresh squeezed (4 – 5 lemons)
4 slices lemon

1.       Preheat oven to 400. Lightly mist an 8 x 8 glass or nonstick baking dish with olive oil spray
2.       In a small bowl, combine the garlic powder, lemon pepper, and seasoned salt.  Mix to blend.  Place the chicken on a large plate or platter.  Rub seasoning mixture evenly over the chicken.  Cover with plastic wrap. Refrigerate for 15 minutes for the seasonings to flavor the chicken.
3.       Place a large nonstick skillet over high heat until it is hot enough for a spritz of water to sizzle on it.  With an oven mitt, briefly remove the pan from the heat to mist lightly with olive oil spray.  Place the chicken in the pan.  Cook for 2-3 minutes per side, or until browned.  Place the chicken, smooth sides up and not overlapping, in the prepared baking dish.  Spray each breast with 2 spritzes of I Can’t Believe it’s Not Butter! Spray.  Pour the lemon juice over the chicken.  Top each breast with a lemon slice.
4.       Bake for 20-25 minutes, or until no longer pink and the juices run clear.  Remove from oven.  Baste with the pan juices.  Let stand for 5 minutes before serving.

Per serving: 147 Calories, 27g protein, 7g carbs, 1g fat, 66 mg cholesterol, less than 1 g fiber, 353 mg sodium

I did alot better than I thought I would this week!  I ate out alot over the weekend. I was really nervous stepping on the scale this morning !!!

Traveling for Spring Break to see family.  Such yummy food will be around me!!  :(  I may just have to run the hundreds of miles home to burn off the calories I eat!!

3/8 - Monday's Run

ran 1.95 mi on 3/8/2010 at 6:20 PM with a pace of 15'30"/mi on the treadmill with an incline of 3. I am registered for a 5k on the 27th of this month and one the 11th of next month!  I really need to kick it in gear.

I am starting the Couch 2 5k program this week, in hopes to help me train!!!

Weekend Overview

Weekend Overview

Friday
I left straight from work to Shelby’s drumline competition.  It was in a town an hour away.  We stopped at Dickies for dinner. {I didn’t do very well with what I ate- more on that below}  The drumline did great and got a trophy for 3rd place!!

BAD FOOD:
Chicken Fried Steak{I only ate half of it}, fried okra & mac n cheese. { I pretty much gave up on figuring points!}

Saturday
We took the kids to see Alice in Wonderland 3D {I really liked the movie!}

BAD FOOD:
popcorn at the movies {I actually ate very little which is surprising since I LOVE popcorn!}

Sunday
Hubby & I went on a date to the movies.  We went to the Studio Movie Grill and saw Shutter Island.  I have to say I really like the movie!!!  It was confusing, but really good!!!

After we got home from the movies and grocery shopping.  We headed out to eat at a local Mexican restaurant.  Shelby had a Spanish assignment that required eating at a Mexican restaurant and ordering in Spanish.

BAD FOOD:
Chopped Salad @ movies
2 taco plate w/ refried beans and rice @ dinner

Well, I decided to join a challenge over at Shrinking Jeans.  I have requested to join a team, but haven't gotten the specifics on that yet.  The Challenge is called: Spring Fling Challenge .  I am getting a late start as it started on Feb. 24th.  But I plan on doing WONDERFUL!!

Weekend ...

What a weekend !

Friday
  • Got my car back from the dealership, steering gear replaced!!  They have to order my new tires, of course!  
  • Found out the Doctor in my little town FINALLY is a PCM for Tricare so I can switch from my NOT SOO GOOD doctor 3 towns away!!
  • Got home from work and made pizzas and watched 2 episodes of Dexter :)

Saturday
  • Started painting a wall in Hayley's room and replaced her ceiling fan.  
  •  Did a 30 minutes on the treadmill -- yea!!!
  • Decided to meet some friends for dinner. And pick up Kaleb from them since he did the 30 hour famine at the church.
  • Had dinner at a new Mexican resturant.  Had a margarita (yum), taco salad and sopapilla.
  • Got home and wasn't feeling too good.
  • Watched beginning of SNL and headed to bed.
  • Got out of bed and started throwing up :(  Ugghh -- I am not one to throw up unless I am really sick!  I am not sure if it was the food or that I ate alot and haven't really been eating that much, or I have some kind of bug.
Sunday
  • Slept till noon
  • Got out of bed and had 3 crackers
  • went back to bed
  • got up again around 4
  • Had some pizza for dinner
  • Feeling much better by about 630.
  • While I was sick in bed all day my husband and kids got the house cleaned, finished painting Hayley's wall, redid the laundry room (I had it on his Honey Do list), went and got groceries and let me sleep and rest all I wanted. {I love my family}
