{Recipe} German Pancakes

This is a great breakfast!  I like to put sliced strawberries on top of mine with some whipped cream !!

Ingredients
  • 6 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons butter or margarine, melted
Directions
  1. Place the eggs, milk, flour and salt in a blender; cover and process until smooth. Pour the butter into an ungreased 13-in. x 9-in. x 2-in. baking dish ( I use a round pie pan) ;add the batter. Bake, uncovered, at 400 degrees F for 20 minutes.
  2. Sprinkle with powdered sugar. Add syrup or fresh fruit with whipped cream.

Lori's Lean Lemon Chicken

Lemon Chicken!


Lori’s Lean Lemon Chicken
Makes 4 Servings
Points: 3

2 tsp garlic powder
2 tsp lemon pepper
½ tsp seasoned salt
4 small (1/4 lb) boneless skinless chicken breast
I Can’t Believe it’s Not Butter! Spray
1 cup lemon juice, preferably fresh squeezed (4 – 5 lemons)
4 slices lemon

1.       Preheat oven to 400. Lightly mist an 8 x 8 glass or nonstick baking dish with olive oil spray
2.       In a small bowl, combine the garlic powder, lemon pepper, and seasoned salt.  Mix to blend.  Place the chicken on a large plate or platter.  Rub seasoning mixture evenly over the chicken.  Cover with plastic wrap. Refrigerate for 15 minutes for the seasonings to flavor the chicken.
3.       Place a large nonstick skillet over high heat until it is hot enough for a spritz of water to sizzle on it.  With an oven mitt, briefly remove the pan from the heat to mist lightly with olive oil spray.  Place the chicken in the pan.  Cook for 2-3 minutes per side, or until browned.  Place the chicken, smooth sides up and not overlapping, in the prepared baking dish.  Spray each breast with 2 spritzes of I Can’t Believe it’s Not Butter! Spray.  Pour the lemon juice over the chicken.  Top each breast with a lemon slice.
4.       Bake for 20-25 minutes, or until no longer pink and the juices run clear.  Remove from oven.  Baste with the pan juices.  Let stand for 5 minutes before serving.

Per serving: 147 Calories, 27g protein, 7g carbs, 1g fat, 66 mg cholesterol, less than 1 g fiber, 353 mg sodium

Menu Plan Monday 3/1 - 3/7

Here is my menu for the week.  I have included a few of the recipes.


Monday
Crockpot Teriyaki Chicken - 6 pts
1/2 c. Honey
Garlic cloves, whole
1/2 c. Soy Sauce
2 1/2 lbs boneless skinless chicken breast cut into 2 in. pieces

Add chicken to crock pot along with soy sauce, honey and garlic cloves.  Set crockpot to low and cover.

Brown Rice - 2 pts

Tuesday
Cheesy Chili-Mac - 5 pts

Wednesday
YoYo

Thursday
Mexican Potatoes - 6 pts
6 med. backing potatoes
1 c. shredded Reduced fat mexican cheese
14 oz. yellow corn
1 c Fat free sour cream
1/2 c salsa

Pierce potatoes and bake 1 hour @ 425 or until tender.  Combine cheese, sour cream, and corn.  Split potatoes lengthwise and top each with 1/6 cheese mixture.  Top with salsa.
SERVES 6
Warm Cinnamon Apples - 2 pts

Chicken Pot Pie - 4 pts
Mandarian Oranges & Yogurt 2.5 pts

Sunday
Ravioli Soup - 4 pts
4 cans 99% fat free roasted garlic flavor chicken broth
1 bag (16 oz) fresh broccoli
1 pkg refrig. fresh mini beef ravioli
parm. cheese

Bring broth plus 1 c water to boil. Add broccoli, reduce heat and simmer 4 minutes.  Add ravioli, return to a simmer and cook, stiring occasionally, 5 minutes. or until broccoli and ravioli are tender.  Sprinkle each serving with grated parm. cheese.
SERVES: 4

Parmesan-Crusted Tilapia = 4pts

Parmesan-Crusted Tilapia

4 points

3/4 cup freshly grated Parmesan Cheese
2 tsp. paprika
1 tbsp chopped parsley
4 tilapia fillets (about 1lb)
1 lemon, cut into wedges

Preheat oven to 400.  In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper.  Drizzle the fish with olive oil and dredge in the cheese mixture.  Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 - 12 minutes.  Serve fish with the lemon wedges.

Lasagna Roll-Ups = 4 pts

Lasagna Roll-Ups
 
4 POINTS
per serving


  Ingredients:
8 lasagna noodles
1/4 cup part skim mozzarella cheese
1/2 cup non-fat ricotta cheese
1 Tbsp. grated parmesan cheese
1/2 pkg. Mori Nu Lite Tofu
2 cups no-fat, low-sodium spaghetti sauce (such as Ragu Lite)
1/4 cup non-fat mozzarella cheese


Instructions:
Cook lasagna noodles 10 minutes or according to package directions, omitting salt and oil. Drain, lay out on a clean cloth towel. Combine tofu and cheeses. Place equal amounts on each lasagna noodle, spreading out as evenly as possible. Roll up jellyroll style. Place roll-ups in baking dish, seam side down. Top each roll with 2 tablespoons sauce. Bake covered for 30 minutes. (Temp not specified)

Note: These may be frozen before baking, omitting sauce until ready to bake.


Makes 4 servings

South of the Border Casserole = 7pts

South Of The Border Casserole

per serving


  Ingredients:
1 tsp olive oil
1 pound 95% lean ground beef
3/4 cup diced onion
3/4 cup diced sweet green pepper
2 seeded, fresh jalapeno peppers, minced (use rubber gloves)
1 (28 ounce) can whole tomatoes
2 cups nonfat sour cream
1 tablespoon clover honey
1 tablespoon chili powder
1/2 teaspoon salt
8 ounces uncooked penne or macaroni pasta


Instructions:

Add the olive oil to a 5 quart nonstick saucepan and place over medium-high heat.
Add the ground beef, breaking it up with the edge of a spatula, until it has lost its pink color. Drain any fat from the pan. Add the onions and green pepper, cooking until softened. Stir in the jalapeno peppers, tomatoes, sour cream, honey, chili powder and salt.
Add the pasta. Stir, cover, lower the heat and gently simmer until the pasta is tender, about 25 minutes. Stir every five minutes, to keep the pasta from sticking to the saucepan bottom.


Yield: 6 servings
7 POINTS per serving


Nutritional information per serving: 373 calories, 4.8 g fat, 24.8 g protein, 42 g carbohydrate, Fiber 2 g, 52 mgs cholesterol, 845 mgs sodium.

Crock Pot Hamburger Casserole = 5 pts

Hamburger Casserole Crock Pot Recipe

Ingredients:
16 oz. extra lean gr. beef (or turkey)
2 cups sliced raw potatoes
1 1/2 cups sliced carrots (I used frozen)
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas –thawed
1 cup frozen whole kernel corn – thawed
1 10 oz. can healthy Request Tomato Soup
1/2 cup water
1 tsp. dried parsley flakes
1 can mushrooms
Salt and Pepper
Directions:
In large skillet brown meat, onion & celery mixture and mushrooms. In slow cooker – sprayed with a butter flavored spray (or a non-stick cooking spray), combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.
Serving = 1 cup
Each serving = 5 Weight Watchers Points

Menu Plan Monday 2/1-2/7

I spent a bit of time on Friday and created my menu for the entire month of February !  I was soo proud of myself, and shocked at how easy it was.  I had a list of things I wanted to make and knew I needed  Crock Pot meal on Mondays due to meetings in the evenings.  I also had one "YoYo" night a week and we have pizza on Fridays (either frozen, homemade or delivered).  I used Google Calendar because my ical is full already of everything else, so using Google was a lot easier.  I even put the points with each menu item on my calendar.  I copied and pasted the recipe in the details, so I can print an "agenda" and it shows all the ingredients and recipe!  AWESOME!!!


Monday

Crocked Pineapple Chicken
Serves 6 @ 4 pts


Ingredients:
6 whole chicken breast halves without skin -- skinned and split
1 dash pepper
To taste paprika
20 ounces pineapple chunks in juice -- 1 can tidbits
2 tablespoons Dijon mustard
2 tablespoons soy sauce
1 clove garlic -- minced

Prep:
Arrange chicken in bottom of crockpot. Sprinkle with pepper and paprika. In a small bowl, combine drained pineapple tidbits, mustard and soy sauce. Pour over chicken. Add minced garlic. Cover and cook on LOW 7-9 hours or HIGH 3-4 hours.

Pork Chops with Apples =5
Green Beans


Pork Chops with Apples
Serves 6 @5 pts
6 boneless pork loin chops
1T. Olive oil
2 apples, cored and sliced
1 clove garlic, whole
1/4cup dry white wine
1/3cup chicken broth
salt and pepper to taste

Heat oil in large skillet. Add chops and garlic and brown well on both sides. Push the chops to the side and add the apples in one layer. Cook about 15 minutes, turning frequently. Remove chops and apples to warm serving dish. Pour fat from skillet. Add wine, stirring to dissolve browned particles. Add broth and simmer to a sauce-like consistency. Discard garlic. Pour sauce over chops and apples.

Lime Garlic Chicken
WW Points = 5
INGREDIENTS:

1 (1 1/2 lb)package bone-in, skinless chicken thighs
1/4cupfresh lime juice
1 1/2cupschicken broth
2 garlic cloves, finely chopped
½ teaspoon dried thyme leaves
¼ teaspoon pepper
2 tablespoons butter or margarine
1 cup uncooked instant rice
chopped fresh parsley (optional)

DIRECTIONS:
Place chicken in 3-4 quart crock pot. Add remaining ingredients except rice and parsley.
Cover and cook on low 8-10 hours.
During last 15 minutes, stir in rice.
Remove chicken from crock pot.
Place rice on each serving plate.Top with chicken.Spoon remaining juices over top and garnish with parsley.

RECIPE: Taco Soup 1pt

Oh my gosh !  I got this recipe from www.chubbiechica.com .  I wasn't sure how good it would be being only 1 pt.  But WOW, it was really good and I loved it !!!!  I was full after 1 1/2 servings!

Taco Soup
Serves 6 @ 1 pt.

Ingredients:
14.5 ounce canned diced tomatoes
14.5 ounce canned diced tomatoes with chilis
14.5 ounce canned Mexican corn with chilis
15.5 ounce can black beans
15.5 ounce can red kidney beans
1 large onion, chopped
1 package taco seasoning mix
1 package ranch salad dressing mix (dry)

Prep:
Saute onion with vegetable oil cooking spray. When softened, combine all other ingredients and cook until heated through.  Serving size is 1 cup!
And yes - eat more than 1 cup.  Maybe 2 ....ok, go for 3!

WW Chicken Noodle Soup Recipe

Weight Watchers Chicken Noodle Soup Recipe

Ingredients:
1 chicken whole, no skin, cut up
2 medium Carrots — peeled and chopped
1/2 cup onion — peeled and chopped
2 Stalks celery — coarsely chopped
2 1/2 teaspoon Salt
2 teaspoon parsley
3/4 teaspoon marjoram
1/2 teaspoon basil
1/4 teaspoon Poultry seasoning
1/4 teaspoon Pepper
1 Bay leaf
2 qt Water
2 1/2 cups egg noodles
Directions:
Place the first 4 ingredients in a 3 1/2-quart slow cooker in the order listed. Combine salt and the next 6 ingredients; sprinkle over vegetables. Add 6 cups water; cover and cook on low setting for 8 to 10 hours. Remove chicken and bay leaf; add remaining 2 cups water. Stir in noodles and cook, covered, on high setting for 20 minutes. Meanwhile remove bones from chicken and cut chicken into bite-size pieces. Add to slow cooker, stir to mix. Cook for 15 minutes on high setting, covered or until noodles are tender. Makes 3 1/4 quarts.
Serves 10
Each Serving = 1 Weight Watchers Point

Trail Mixes

I went and got stuff to make a couple of trail mixes to take with us this weekend. I thought I would share the recipes :)

Kids Trail Mix
If you need something for a camping trip, try this one.
Prep Time: 5 minutes
Ingredients:

* 4 c Chex cereal
* 1/2 c Dried fruit bits
* 1/2 c Raisins
* 1/2 c peanuts
* 1/2 c M & Ms

Preparation:
Put into a large ziploc bag and shake to mix.

BIRD SEED (Trail Mix)

4 c. Cheerios
2 c. M&M's
2 c. raisins
2 c. nuts
Mix well. Place in zipper bags for each hiker.
