Crock Pot Hamburger Casserole = 5 pts

Hamburger Casserole Crock Pot Recipe

Ingredients:
16 oz. extra lean gr. beef (or turkey)
2 cups sliced raw potatoes
1 1/2 cups sliced carrots (I used frozen)
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas –thawed
1 cup frozen whole kernel corn – thawed
1 10 oz. can healthy Request Tomato Soup
1/2 cup water
1 tsp. dried parsley flakes
1 can mushrooms
Salt and Pepper
Directions:
In large skillet brown meat, onion & celery mixture and mushrooms. In slow cooker – sprayed with a butter flavored spray (or a non-stick cooking spray), combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.
Serving = 1 cup
Each serving = 5 Weight Watchers Points

I went to see Dear John this past weekend.  I read the book last month.

I liked the movie for the most part.  I wasn't totally blow away by it.  The book of course, is alot better than the movie.  It was nice seeing Channing Tatum in uniform.

Weight Watcher Tips

I have been on WW for a couple of weeks now and here are some tips I have learned.

  • Use a snack size ziplock bag and put snacks in them with points written on them.
  • Try to use the points calculator and nutrition information for the resturant you are going to before you go so you know what to order.
  • Don't get too upset if you go over your points for a day, you have your extra weekly points.  This has been big for me since I just started.
  • Write points on all your food in your pantry.  This way, when you are looking for something to make, you can easily see how many points they are.
  • If you have an iPhone or iPod touch, download the WW app - it is great !
  • If you find recipes, use the nutritional information on it to figure the points, and write the points on the recipe.

Rik had made a deal with Kaleb that if he has all A's and B's for 2 report cards in a row he would get him a 32" HDTV. Well, Kaleb had all A's & B's on his report card :) So, we got him a new TV... he loves it.

Changing the air filter -- not soo easy!

Changing the air filter in the AC should be easy, right?  Well, we have 2 units, both of which are in the upstairs attic.  While Rik was on Det this last time, I had to change them.  No problem.  I hadn't been in the upstairs attic since we bought this house... no need to really.  Until now .....
I changed the one, not too hard ... but the other one !  Look at this picture !

  No, the picture is not turned sideways... this is exactly how it looks.  I had to CLIMB on the side to get to where the filter is!  NOT REAL safe if you ask me !

I want to change my layout and stuff on this blog.... not sure what I want it to look like, but I want to make it more "fun".  So, if you stop by and it looks a mess {like my house most of the time}, it's because I am slowing getting around to make some changes.

Extended Warranties !!! Apple Care

So, Shelby has been having problems with his optical drive on his laptop.  I finally got a chance to take a look at it this weekend.  I would not read ANY type of disk.  I thought I may have purchased Apple Care when I bought it so I checked online and sure enough!!  I HAVE IT !!

I made an appointment at the Apple store to have it looked at and the optical drive has failed.  They are replacing the drive as well as replacing the case since it has a little crack.

If I didn't have Apple Care, it would have cost me at least $300 for the new drive and then I would have to pay an additional rate for the tech to install it.  But since I have Apple Care IT'S COVERED !


I don't always purchase those extended warranties unless I have the extra money to spend.  I am thinking with appliances and electronics it is a good investment.

My Little Life

1. What are you most afraid of?
Something happening to my kids or family.  I also have a love/ fear of tornadoes.

2. Do you use a flat iron or curling iron?
Neither .. lol  I think a flat iron is just too much work.

3. Hands-free or phone to the ear?
Phone to the ear or speaker.  Having previous lived on base, I don't really like driving and talking on the phone at the same time.

4. Do you have a matching bedroom set?
No, I don't.  I would like to get one now that we have bought a house and won't be moving as often.  Heck, I work for a furniture broker.

5. Do you believe in the paranormal?
Yes I do somewhat.  I think those who has passed on still have a way to connect with us and influence things we do.

I thought is was pretty neat for those of us bloggers who can't make it to 2010 BlissDom ConferenceHousehold6Diva is hosting this bloghop.

So welcome Blizzard Bloghoppers. Here’s a little bit about me:

I am a mother to 3. (16,14 &10) 
I am a Navy Wife and have been for 18 years.
I finally live in my home state of Texas and my husband retires from the Navy in 2 years.
I have ADD and am living thru it.
I was adopted at birth and have met my birth parents after 30 + years.
I am currently on Weight Watchers.
I enjoy reading, crafting. blogging, watching movies, cooking, spending time with my family and will try just about anything.

My blog is mostly my ADD self talking about what ever comes to my mind.  I blog alot about Weight Watchers right now because I just started that and am having success.

Thursday and nothing...

It's Thursday and I wanted to have something to blog about and I don't have anything.

Weather: BLAH - rainy and 41 degrees
Mood: Good - hubby came home today
What's new: Boss came into the office today - he is doing pretty good and will start Chemo next month.
Dinner tonight: Chicken & Dumplings
Weight Watchers: going great, lost total of 5 lbs! 

Projects: Got a bunch of fabric samples from work and I am planning on making some pillows for the game room. I don't know when I will get around to making them.

Well, there is my nothing post for the day :)

Book vs. Audio Book

I used to be a big audio book fan and listened to more audio books than I read physical books.  Within the last 2 years, I have read a lot more "physical books" than listened to audio books.

Soo, when I finished reading the last book I had, I wanted to read, The Girl with the Dragon Tattoo by Stieg Larsson but I am on the wait list at the library.  Well, since I have a subscription to Audible.com I decided I would just download it.

I have listened to only part of it and can't seem to get "into".  Not sure if it is because it is an audio book or because it just isn't sparking my interest. Soo, I have stopped listening to it and picked up another book to read and will wait for my turn at the library.

Menu Plan Monday 2/1-2/7

I spent a bit of time on Friday and created my menu for the entire month of February !  I was soo proud of myself, and shocked at how easy it was.  I had a list of things I wanted to make and knew I needed  Crock Pot meal on Mondays due to meetings in the evenings.  I also had one "YoYo" night a week and we have pizza on Fridays (either frozen, homemade or delivered).  I used Google Calendar because my ical is full already of everything else, so using Google was a lot easier.  I even put the points with each menu item on my calendar.  I copied and pasted the recipe in the details, so I can print an "agenda" and it shows all the ingredients and recipe!  AWESOME!!!

Crocked Pineapple Chicken
Serves 6 @ 4 pts


Ingredients:
6 whole chicken breast halves without skin -- skinned and split
1 dash pepper
To taste paprika
20 ounces pineapple chunks in juice -- 1 can tidbits
2 tablespoons Dijon mustard
2 tablespoons soy sauce
1 clove garlic -- minced

Prep:
Arrange chicken in bottom of crockpot. Sprinkle with pepper and paprika. In a small bowl, combine drained pineapple tidbits, mustard and soy sauce. Pour over chicken. Add minced garlic. Cover and cook on LOW 7-9 hours or HIGH 3-4 hours.

Pork Chops with Apples =5
Green Beans


Pork Chops with Apples
Serves 6 @5 pts
6 boneless pork loin chops
1T. Olive oil
2 apples, cored and sliced
1 clove garlic, whole
1/4cup dry white wine
1/3cup chicken broth
salt and pepper to taste

Heat oil in large skillet. Add chops and garlic and brown well on both sides. Push the chops to the side and add the apples in one layer. Cook about 15 minutes, turning frequently. Remove chops and apples to warm serving dish. Pour fat from skillet. Add wine, stirring to dissolve browned particles. Add broth and simmer to a sauce-like consistency. Discard garlic. Pour sauce over chops and apples.

Lime Garlic Chicken
WW Points = 5
INGREDIENTS:

1 (1 1/2 lb)package bone-in, skinless chicken thighs
1/4cupfresh lime juice
1 1/2cupschicken broth
2 garlic cloves, finely chopped
½ teaspoon dried thyme leaves
¼ teaspoon pepper
2 tablespoons butter or margarine
1 cup uncooked instant rice
chopped fresh parsley (optional)

DIRECTIONS:
Place chicken in 3-4 quart crock pot. Add remaining ingredients except rice and parsley.
Cover and cook on low 8-10 hours.
During last 15 minutes, stir in rice.
Remove chicken from crock pot.
Place rice on each serving plate.Top with chicken.Spoon remaining juices over top and garnish with parsley.
